Garlic's nutritional and beneficial properties are due to its extremely rich chemical composition. It is much lower in water (60-64%) than other vegetables, and higher in carbohydrates (more than 20%) and nitrogenous substances (about 7%) than onions. The fibre content is 0,7 %. Garlic bulbs have a dry matter content of 35-42%, which is attributed to their high content of inulin (20-27%), which is converted into fructose, a valuable sugar for the human body, when exposed to stomach acids. The bulbs also contain 6-8 % crude protein, 0,5 % reducing sugars and about 5 % fat.
