The production process originates both from the classic Ayurvedic texts and from the modern traditions of the Vaidija (Ayurvedic physicians) family. The sharkara is very gentle and has a harmonizing effect according to Ayurveda. The acid-producing parts of cane sugar are mainly found in the stem and roots of the plant. Purification and a slow recrystallization process remove these toxins. About 1/3 of the volume is lost during production. The light yellow, uneven crystals remaining after crystallization are dried in the hot Indian summer sun. This process matures and gives Ayurveda strength. Finally, it is crushed into small pieces and ground into a powder.
At the end of refining, normal sugar is usually bleached with sulfuric acid, which destroys all the properties of Ayurveda. True classic Ayurvedic Sharkara Ayurvedic sugar is not processed in this way. It is seen in light gray. It has an almost neutral pH.
