Jaggery is more than just a sweetener. In India, it is considered a particularly valuable food. Jaggery is used for its caramel and fruity flavor and is often used in hot and cold drinks, sweets and Indian dishes.
Jaggery is a traditional unrefined sugar widely used in Asia, Africa and South America. This type of sugar is produced by concentrating sugarcane juice without removing the molasses (brown sugar syrup) and separating the sugar crystals. Unrefined cane sugar is less sweet than the refined sugar we are used to because of the unsweetened impurities left in it. Unrefined sugar is healthier than refined refined sugar. It also contains some mineral salts, the process of preparing this sugar does not require any additional chemical additives. Unrefined sugar enters the bloodstream more slowly and evenly, so blood sugar levels don't spike as quickly.
Jaggery is raw sugar made from sugarcane molasses and is rich in minerals, vitamins and trace elements. An Ayurvedic classic!
